  17. 1) rub a large flat dish with garlic
  18. 2) slice as may large ripe red tomatoes as it takes to cover the dish
  19. 3) chop up as much basil as you want to use, along with some onion 
  20.    (shallots are best if you can get them ). Mix the onion and garlic 
  21.    with salt, pepper and 3 or 4 tablespoons of good olive oil
  22. 4) chop enough mozzarella cheese into small fingers to sprinkle over 
  23.    the plate of tomatoes
  24. 5) sprinkle the oil and basil mixture over the top
  25. 6) serve cool, but not direct from the refrigerator
